Wow, it’s tough to come back from a great vacation! From unpacking, to the laundry and then there’s digging out from all the emails at work. I think I’m finally on top of it. Sometimes you think to yourself is going on vacation really worth it? Then I remember the fun times we had and all the great memories we’ll carry with us. And, then there’s that warm banana bread! I keep dreaming about it!
Every morning we woke up to the most beautiful breakfast! The best part was the giant loaf of banana bread made from scratch and brought warm to the table. Well, guess what? I got the recipe from Hyacinth, our cook. She’s been baking this bread for guests for decades and she has never written down the recipe. She just makes it by memory. One morning I got up early and begged to watch her make it, taking careful notes the whole time. The cool thing is she makes most of it in the blender. Just one or two interesting ingredients, a bit of lime zest and rose water. She says if you can’t find rose water, no big deal, just leave it out but I did find a place to get it online. Anyway, you need to make this and be sure to serve it warm with lots of butter to spread on top!
