Ingredients:
2lbs boneless chicken brests
1 can diced tomatoes, no salt
1 can chopped whole potatos
1 green pepper
1 red onion
2 roma tomatoes
1 tbl spoon garlic
1 tbl spoon hot curry
1 tbl spoon mild curry
1/2 tbl spoon seasoned salt
black peper to taste
Directions:
First, cut chicken into chunks, place in non stick stove top skillet, add one can tomatos, one can potatos and garlic. mix, and place on med heat. Then add the curry and seasond salt, mix, and cover. Stir frequently. As that cooks, chop to medium size the green peper and red onion, set aside.
While chicken cooks, also chop roma tomatos and set aside.
When chicken is almost done, ( about 15 min) add green pepper and onion, cover and simmer, stirring frequently.
Serve with nann bread, and top with fresh Roma tomatos.

My kids love this dish, Its a great way to keep it healthy, but still have your children eat with different cultures in mind.
