Try brining your bird! Soak the turkey in salted water (1 cup kosher salt per gallon of water) and refrigerate overnight to help keep it moist during the cooking process. You can add sugar and spices to the brine for more flavor too.

My father taught me to do this with chicken as well as turkey. I especially like to do it before grilling bone in white meat chicken pieces because I like to leave them on the grill a bit longer to be sure they are cooked through. I just soak for a few hours in a bowl in the fridge. I have not been disappointed.
