Beer Boiled Shrimp & Seriously Good Cocktail Sauce

Ingredients:
Beer Boiled Shrimp
1 cup water
2 bottles (12 ounces) beer
2 bay leaves
1 tablespoon whole black peppercorns
2 tablespoons celery seed
2 cloves garlic, peeled
2 to 3 pounds shrimp
2 lemons

Seriously Good Cocktail Sauce
1 bottle (12 ounces) chili sauce
1 1/2 cups ketchup
A few dashes of hot sauce
1 tablespoon Worcestershire sauce
1/2 cup prepared horseradish
1 small lemon, zest & juice

Directions:
Combine water, beer, garlic, a few slices of lemon and seasonings in a large pot and bring to a boil over high heat. Add shrimp. Cover; remove from heat and let stand 5 to 8 minutes or just until shrimp turn pink. Drain and chill shrimp. Serve chilled with Seriously Good Cocktail Sauce and lemon wedges.

To make cocktail sauce, combine all of the ingredients in a large bowl and whisk until thoroughly mixed. Refrigerate until ready to serve. Keeps for up to a week in the fridge. Serve cold with shrimp for the perfect shrimp cocktail. If you want it a little less spicy, back off on the horseradish. Man, this stuff is good!
