Ingredients:
Sweet Dough Crust
1 cup flour
1/2 cup butter, room temperature
1/3 cup sugar
1/2 tsp vanilla extract
Cheesecake Filling
8 oz pack of cream cheese
1/4 cup sugar
1 egg
1/2 tsp vanilla extract
Topping
3 peeled and sliced granny smith apples
1/4 cup dried cranberries
1/4 cup chopped walnuts
1/2 tsp cinnamon
1/4 cup sugar
apricot jelly
Directions:
Make the crust by whizzing all dough ingredients in the food processor. Press evenly into the bottom of an 8″ fluted loose bottom based pan and up the sides about 1 inch. Bake for 15 mins in preheated 375 degree oven until very light golden brown.
Make the cheesecake filling by mixing cream cheese, sugar, egg and vanilla and pouring into base.
Mix the apple slices, nuts and cranberries with sugar and cinnamon and lay over top of filling in circular overlapping pattern. This may seem like a lot of apples but it makes more than one layer. Put back in oven and bake for about 35-40 minutes. Brush surface of tart with melted apricot jelly to make it shiny.
Notes:
Serve warm with whipped cream or vanilla ice cream or enjoy chilled straight form the fridge. Omit the nuts if you don’t like nuts and pears or plums can replace the apples. Enjoy and happy Thanksgiving!
